Most tomatoes that we find in the grocery store have been bred to look like cartoon tomatoes: plump, red, round, and easy to store in the produce section of the supermarket. These tomatoes were created for consistency, but not necessarily flavor—good for people who sell tomatoes, not the people who buy them. They come in all shapes, shades, and colors. Unlike the supermarket variety, we're used to, heirloom tomatoes are green on purpose. And the ones that come dressed in purple aren't bruised. Yellow heirlooms tend to be milder than the tart, sharp reds, and the greens have a light, zesty bite. The darker varieties have more savory qualities than that of the sweet.
